Half Caff. espresso shots: Half caffeinated and half decaffeinated espresso shots. Decaffeinated does not mean caffeine free. There will still be some amount of caffeine, but not to the same effect as caffeinated.
Ristretto shots: Espresso shots that are pulled for a longer amount of time, giving them a sweeter flavor.
Coffee from highest caffeine level to lowest:
Blonde (or light roast)
Medium
Dark
Caffeine level in coffee beans has to do with the way the beans are roasted (e.g. roast time).
